Do you ever look for a signature summer cocktail? Personally, I enjoy anything with bubbles and search for refreshing summer drinks with champagne or prosecco! This cocktail is a twist on the classic “Hugo Spritz,” but in my opinion, is lighter and more refreshing! I call this the Summer Spritz! In this version, I started with a rose shaped ice mold (see below). If you are having a few guests over, this ads a little bit of pizazz. In each mold, I placed some mint leaves from my garden. If you like a sweeter cocktail, you can also add a touch of agave syrup to the mold.

I then placed the frozen mint into my chosen glass, with the pattern side facing upward.

Next, I rimmed the glass with a slice of lime, poured a splash of seltzer (you can use any kind), and topped it off with bubbles! This recipe works great with any type of bubbles! In this particular Lowcountry Lush Spritz, I prefer cava sparkling wine because it is a bit sweeter and mixes extremely well with lime and mint! There is no need to add agave syrup to your ice mold either. However, feel free to revise this as your tastebuds require.

Also, if you ARE serving a group, how about a pitcher? Simply mix a several thin slices of lime, 12 ounces of seltzer, 1 bottle of your preferred bubbly, and float your ice molds in your glasses, and pour your summer spritz into the glasses when your guests arrive!
